  • "Beef: Its What's For Dinner", or so proclaim the signs posted on the large cattle farms in the rural legacy ranches and beef producers' spreads where I reside. Cow-calf units are pregnant heifers sold at auction that will birth in the springtime and provide new calves for the beef producer to raise and market later for a profit. In the western U.S. I heard them called "springers" or "spring cows".
