I am amazed at how many people states things taste like chicken when they don't know how to describe how something tastes, like Alligator, to me tastes sorta like rattlesnake, Raccoon tastes like a nice fat. pampered lapdog, small ones only, preferably a Peke, (okay I 'm joking, I've never eaten a Peke, but I don't like them as animals) but raccoons can be rather tasty in the pan of the right cook.
