That luncheon featured a Yellowtail Tartare with Caviar from Nobu Matsuhisa, a Twice-Baked Upside Down Cheese Souffle from Francois Payard, Paul Bartollotta's Penne al Ragu di Crostacei and we owe him an apology for writing that he had left the Vegas Wynn Hotel; he is still there and running his superb restaurant.

We went on to the Beef Tartare ($13), with water lettuce (mustard leaf), water chestnuts, spicy herbs, nuoc leo (Vietnamese peanut condiment, here powdered), and something called chlorophyll sauce, an intriguing version and very tasty.

I had lunched there with Bernie Weinraub some months ago and came away with memories of one dish, the Napoléon Tartare $28, an ethereal dish of hand-sliced steak tartare gently seasoned and formed into a rectangle, then layered in the center with a spread of caviar.
