Your only choice for cheese is one between emmental and gruyère, both of which melt under the merest heat: emmental (or Swiss cheese, as it is known in New Zealand, Australia and North America) is a hard cheese of cow's milk that is nutty and slightly acidic; gruyère is made from cow's milk and is sweet but slightly salty (overall imparting a somewhat mineral quality to a dish).
