Thanks to my old friend Selwyn Shuman's recommendation, I bought a little desktop application called Anagram that has one very simple function: when I highlight someone's e-mail signature then press a hot-key, it creates a new Outlook contact record out of it, making "guesses" as to what information belongs in what field.
