It appears the wiktionary definition has taken a cowardly "neutral point of view" style definition.
When we use a term like frankenfood, we invoke images of mad scientists creating things that turn upon their creators. The gist of a term like this is to imply that the food will cause us harm in the future.
A genetically modified food term on the other hand doesn't come with the mad science hyperbole.
